I didn't have a guiness. But, I had my Newcastle.
Raised and toasted with my buddy Paul here.

Hard to believe it has been a full year.

Never been a fan of the Guiness, but have totally been stocking up on supplies for this weekend to enjoy some good ol' Irish Car Bombs, and some grilled burgers. Miss ya Cleff, it's weird to me that I think that the NFL is locking down, b/c they can't sponge your knowledge this season.

Summer Corned Beef and Cabbage Burger

(created by Sean Vostinar)

Ground beef

Corned beef seasoning*

Shredded cabbage

Equal parts, Dijon mustard, ketchup, mayonnaise

Dash of Worcestershire

Salt and pepper

Havarti cheese

Salt meat, add spice mixture, and knead to combine. Grill or skillet fry in clarified butter. Melt cheese on burger. Mix mustard, ketchup, mayonnaise, salt and pepper in a bowl. Fold shredded cabbage into dressing. Place completed slaw between split soda bread roll.
Irish Brown Soda Bread

2 cups wheat flour

2 tsp. salt

1 cup buttermilk

1/2 tsp. baking soda.

Combine ingredients and form into patty shapes. Cook on covered grill or covered cast iron skillet. Maintain surface at 325-350 degrees for 20 minutes, flipping half way.

* Seasoning consists of: 9 tsp. black peppercorns, 6 tsp. mustard seed, 3 tsp. whole cloves, 3 tsp. allspice, 3 tsp. juniper berries, 2 tsp. ground ginger, 1 tsp. ground cardamom, 1 tsp. ground nutmeg, 1 tsp. fennel seed, 1 tsp. Kosher salt.

I think the homemade soda roll is going to be fantastic...and will impress those to whom the burger is served.

Since Sean did most of his cooking at my house I have a nice size jar of the Corned Beef seasoning that he made. If you can wait until next weekend to make the burgers I will send some out to ya this week. I also have a Taco Seasoning he made will forward some of that as well.

That'll totally work! It would be so perfect to use ingredients that the man himself put together.

I'm still very confused by what happened with him. He wrote a very long post at an odd hour and the next day he was gone. I wasn't close to him or anything but he seemed to have so many interests and talents. I learned of his death based on what I read on these boards had left me feeling very uneasy. I have so many burning questions about it. Is there any info about the end of sean's life that can be shared? When I first read about this it really started a several week period where I was thinking about people ending their own lives and it's just gotten me freaked out a little bit. I really just want to understand.
